The Pompadour custard is a traditional Parisian-style pastry. It's made from pure butter puff pastry, with a crisp base and a smooth cream made from whole milk and Mayotte vanilla pods. Having acquired the Hôtel d'Evreux in 1753, the Marquise de Pompadour, favourite of King Louis XV, entertained guests in the salon on the ground floor of the Hôtel d'Evreux, which today bears her name.

Our chocolate tart "Emperor's Staircase" is an encounter between the Alain Ducasse chocolate factory and the kitchens of the palace. This tart is made with a sweet pastry, a creamy 70% (Madagascar) Alain Ducasse dark couverture and a chocolate ganache.
